This month’s cooking adventure is Italian themed! Join us on Sunday, October 4th to learn the ins and outs of vegetarian “meatballs” – complete with risotto, pasta and vegetarian appetizers! Zoom in from your home kitchen for this live, interactive, cooking experience. When you finish the class, you will know how to make several vegetarian Italian dishes, and have a ready-to-eat meal for 4 – 6 people.
Sheila attended the plant-based Culinary Institute Boot Camp in Napa, CA, and she loves sharing what she learned with you. She is the founder and owner of Wellness Becomes You.
In this workshop she will show you how to prepare Vegetable Broth from scratch, Risotto with Fresh Herbs, Spaghetti al Limone, and Pasta with Tomatoes, Basil or Mint and Pistachios.
Come with your curiosity, a cutting board, your favorite knife and a spoon for stirring, and let the fun begin. You will also need a pot for cooking the broth, the risotto, and the pastas. Recipes will be provided when you sign up!
The ingredient list is provided below for your convenience:
- Celery stalks
- Yellow onion
- Scallions (green onions)
- Tomatoes (cherry or grape sized)
- Garlic
- Flat leaf parsley
- Fresh thyme (or dried can be used)
- Fresh basil (or substitute with flat leaf parsley)
- Fresh mint (or substitute with basil)
- White balsamic vinegar (optional)
- Butter or a vegan butter
- Arborio rice (or sushi rice)
- Spaghetti (or your choice of pasta)
- 2-3 Lemons
- Parmesan cheese (finely grated)
- Dry white wine
- Red pepper flakes
- Olive oil
- Pistachios
